Pesto

Back to another Italian Classic, PESTO! Growing up, I never really ate pesto, it just wasn’t something we had as a family. This was actually a request my husband had and it looked simple enough so I gave it a shot. I’ve been making pesto for a few years now and there really is nothing quite like fresh basil, especially the smell.

This recipe is a simple, fresh classic with room to make your own tweaks based on your preference. Here are my recommendations. Use spinach nests if you can find them. They cook fast and it’s a healthier noodle. I also add red pepper flakes to taste to give it a little extra zing. Top it off with fresh shaved Parmesan cheese. This is a quick dinner to make during a busy work week. We usually add diced chicken as our protein.
