Pan-Seared Filet Mignon with Garlic & Herb Butter

Let me start off by saying that I never thought I would have tried a piece of steak in my whole life! Something about the thought of it was a real turn off for me. Yes, I’ve had burgers and no, it’s not the same thing (at least not to me). I even managed to go 34 years without eating a piece until this past Father’s Day.

I decided that with such a busy year and having just recently welcoming my 2nd son, I decided to cook my husband a steak. Wait….a steak? How could I possible cook something I’ve never tired? I thought about going back to Pinterest and looking for something else to make or just going with the standard burger but not this year! This year was all about changes so why not start with expanding my pallet too?

I searched and searched and finally found what looked to be the best and most rated recipe for the Cadillac of steaks, the Pan-Seared Filet! I bought all my items and was actually looking forward to tying something new. There was no turning back now and no time for tears. This recipe was followed exactly as recommended and let me tell you, my first piece of steak was just as flavorful as the picture told my eyes it would be!

Meat should be removed from the fridge about 30 minutes before your ready to start searing. Be sure to salt and pepper them before placing them in the hot skillet. Also, don’t forget to get your butter compound out of the fridge at least 10-15 minutes before your steaks are ready. This really was a wonderfully flavored butter with fresh Rosemary, Tarragon, and Garlic. I recommend using a cast iron skillet if you can to really soak up all those flavors. Steaks need to be seared about 2-3 mins per side to get that nice bark look and then pop those babies right in the oven for about 6 minutes to get that medium rare cook. I serve with a side of mashed potatoes and incorporate the herb butter into the mash. This Pinterest recipe was spot on and not difficult even for a beginner steak cook like me.

So our first Father’s Day steaks turned out to be a huge success and has since become a permanent menu item in our house. I guess the moral of the story here is don’t be afraid to try new things and embrace change! So, what do you think? Not bad, right?
